Is it just me, or does cheese make everything better? I feel like I find a way to put cheese on anything I am cooking at home. So naturally, I buy a lot of cheese, and I like when I can get it for a good price. As you can imagine, I am a fan of Sendik’s Cheese of the Month specials. Every month, we highlight a new cheese at a great value.
For the month of January, we are featuring Parmigiano Reggiano, also known as “The King of Cheeses.” This cheese is arguably better than any parmesan that I’ve tasted before. (As I learned, parmesan is not parmigiano reggiano.) It’s intense, but not overpowering, and has a complex taste with nutty, caramel and buttery flavors. I’m also, as you might guess, a fan of the price. It is over half off, just $9.99lb through the end of January.
Crystal, the cheese manager at our Mequon store, explained that Parmigiano Reggiano goes great with pasta, potatoes and vegetables but if you’re feeling a bit more sophisticated, she says that in Italy, it is common to eat the cheese with nice honey, crusty bread and fruit. Vickie, our West Bend cheese manager, says her favorite is adding shaved Parmigiano Reggiano to a Caesar Salad.
Marc Goodman, our cheese director, explained that only select provinces in Italy can produce Parmigiano Reggiano, and they have been making it in those areas that same way for close to 1,000 years. It’s made from raw milk, but then follows a standard cheesemaking practice. The only difference is Parmigiano Reggiano is not pressed. The cheese has about an 18-month aging process.
