Happy Valentine’s Day! Though it’s February 14th, today’s blog post is not holiday- related! Instead, we’re talking veggies!
I don’t eat a lot of meat, so vegetables play a big role in my diet. I love taking vegetables that I’m not as familiar with and finding recipes to turn them into a yummy snack (kale chips, kohlrabi fries, etc!).
I was happy to see that we have a variety of produce for 99¢ or less this week. We just moved into our house, so I need to fill our fridge up with healthy items and start cooking in my new kitchen. Here’s a few recipes that I’m going to be making this week with our sale produce– I thought I’d share!
Zucchini is my favorite vegetable of all time, and it’s on sale for 59¢ lb. I could dedicate an entire blog to my love for zucchini and all of the recipes I’ve made with it, but instead, I’ll just keep it simple and tell you about my favorite recipe: Zucchini Oven Chips. They are so yummy and easy. I once cut up a whole zucchini to have these for a side dish with dinner, and I ate them all before Jeff even got home. (Oops.)
If you’re a fan of Mediterranean food, grab a cucumber (49¢ lb) and a tomato (99¢ lb) to make this Mediterranean Couscous Salad. It’s phenomenal, and in my opinion, pretty healthy.
And then, of course, there are the broccoli crowns (99¢ lb). Just like the zucchini, my favorite is just a simple recipe. This Roasted Broccoli is ready in about 20 minutes, and is the perfect healthy side to add to any meal.
It’s known that eating vegetables benefits your health, but it’s even more enjoyable to eat veggies when you have delicious recipes that you can’t get enough of!Blogs, Featured, Red Bag Insider | February 14th, 2014
