Enjoy Sendik's All Week

Hey, guess what … it’s Thursday and it’s still raining.  I’m listening to my poor sump pump working away as we speak.  Does anyone else stress out over their sump pump like I do when it rains for days on end?  If you’ve ever had water in your basement you know what I’m talking about.  I literally lose sleep over something that’s completely beyond my control.  It reminds me of one of my dad’s favorite quotes: “Things without all remedy should be without regard” (Lady MacBeth, Act 3, Scene 2) … I can’t end rampant precipitation so I suppose I’ll play like Lady Macbeth and move on.
Hard not to worry though.

On the bright side:  April showers bring May flowers, so in honor of greener pastures, today’s three recipes all contain (you guessed it) a green ingredient.  Green in your pocket, green on your plate.  Win, win. : )

Asparagus & Mushroom Risotto is a fabulous meatless dish that uses four of this week’s sale ingredients:  fresh asparagus, fresh sliced mushrooms, Emeril’s Chicken Stock, and Sendik’s Olive Oil.  This also makes an excellent side dish to any grilled meat or sauteed fish.

You might recall this Panko Crusted Tilapia Sandwich that I talked about when the Seven Days, Seven Ways to Save Sale first kicked off.  I thought this would be a good time to re-visit this recipe since it’s the last week of the sale.  Look for the fresh tilapia to be on sale this Friday.  Other sale ingredients include Emeril’s Panko Breadcrumbs, and iceberg lettuce.  Okay, iceberg lettuce is the only green item in this recipe.  It’s light green but it still counts. : )

Lastly, for a lighter dinner or as a side dish to the Black Bean Soup you’ll find on the same page, try these Roasted Vegetable Quesadillas.  They’re a great way to get veggies in to your kids and they use five sale ingredients (six if you throw in sliced mushrooms like I sometimes do).  Look for fresh asparagus, red bell peppers, Mission Flour Burrito Tortillas, Sargento Shredded Cheese, and either El Pinto Salsa or Chi Chi’s Salsa for serving on the side.

I hope we’re all not sporting webbed feet by the time the weekend rolls around.  I hope all of our basements stay dry.  And I really hope the rain ends soon.   Stay dry, friends!
