Enjoy Sendik's All Week or … Total Pumpkin Mania.

Humor me while I immerse us all in everything pumpkin from now until the end of next weekend.  Here are three fantastic recipes that make excellent use of this versatile autumn favorite: there’s one for breakfast, another for lunch or a light dinner, and a third for a decadent, holiday-worthy dessert.  I’m looking forward to all of them, especially the pancakes.  Oh, and the soup.  Okay, I want the cake too.  Grab some sale Libby’s Canned Pumpkin and let’s hit the kitchen.

Nothing says “momma loves you” like Pumpkin Pancakes from scratch.  Don’t be afraid of the “from scratch” part, they’re not hard to make.  In fact, my 8th grader (who is not exactly a stickler for details) can pull them together without a problem.  Okay, without much of a problem.  Let’s just say cracking eggs isn’t really her strong suit.   Let your kids whip them up and supervise the cracking of the egg as you see fit.  Look for sale Libby’s Pumpkin, C & H Brown Sugar, Gold Medal Flour, Morton & Bassett Spices, and Shurfresh Grade A Large Eggs.

I know I just discussed a fabulous fall soup on Tuesday, but I’m of the mind that one can never have too many cold weather soup recipes in her recipe box o’ tricks.  Don’t forget this pumpkin version … dang, it’s good.  Look for sale Pacific Broth, Swanson Broth, or Kitchen Basics Stocks;  Libby’s Canned Pumpkin,  Land o’ Lakes Butter, and Morton & Bassett Spices.

 

 

Finally, let’s say you’re in charge of bringing dessert to wherever you’re going for Thanksgiving.  Let’s also say you’re the sort of fun loving guest who likes to shake things up a bit here and there.  Break the pie tradition just a wee little bit with this excellent Pumpkin Layer Cake with Brown Sugar Cream Cheese Frosting.  It’s a showstopper, guaranteeing your invitation back next year.  Look for sale C&H Sugars, Philadelphia Cream Cheese, Land o’ Lakes Butter, Shurfresh Grade A Large Eggs, Libby’s Pumpkin, and Morten & Bassett Spices.
