I have for you today three terrific salads that make excellent use of ingredients from this week’s Sendik’s sale ad. Two are fantastic meals in themselves; the third would be a perfect light lunch or a side dish to nearly any grilled meat or fish you can think of. When it’s too warm to heat up your kitchen and stand by the stove, salad for dinner is the way to go.
Cobb Salad with Herbs & Sherry Vinaigrette is hands down my favorite salad recipe of all time. If you’ve been reading here for a while you’ve heard me say that I ate approximately 40 Cobb Salads when I was p.g. with my small child. That’s one a week throughout her gestation, for anyone who keeps track of these things. I can give you a review of pretty much any Cobb Salad north of downtown, just hit me up — but if you don’t feel like going out, make this one at home. Swap in a Sendik’s rotisserie chicken if you really don’t feel like cooking. : ) Look for sale Romaine lettuce, Roma tomatoes, and Castello Danish Blue Cheese.
Winner, winner taco dinner: Layered Taco Salad is an awesome, family friendly meal that appeals to everyone around here. I know, I know – I said there wouldn’t be much standing by the stove, but making the meat mixture really doesn’t take that much time (approximately 15 minutes). You can even assemble everything early in the day before your house heats up or before you head out to do your thing. Look for sale Romaine lettuce, Roma tomatoes, Eden Brand Organic Beans, Chi Chi’s Tortilla Chips or Beanitos Bean Chips, and Daisy Sour Cream.
For a healthy side dish, try this Spicy Quinoa with Cucumbers and Tomatoes. Last time I made this I ate it for lunch for three days – it’s nice to have in the fridge for a quick bite on the run. Look for sale Ancient Harvest Quinoa, seedless cucumbers, and Roma tomatoes.
