This month we celebrate the launch of a new line from one of our favorite Wisconsin producers, Belgioioso. In the endless pursuit of perfection, Gianni Toffolon, Belgioioso’s original Master Cheesemaker is always tinkering with combinations of flavors and textures in an attempt to create the next great cheese. La Bottega di BelGioioso Artigiano is this cheese.

Grounded in tradition with an eye toward the future, Artigiano is crafted using home grown cultures that have been developed over decades to achieve a flavor palette all its’ own. Pleasantly nutty and sweet, Artigiano is mixed in small batches and cured using proprietary, artisanal methods to achieve its’ delicate crystalline texture.

Since the best things come in pairs, you have two great flavors to choose from this month. The first flavor is the Artigiano Classico with flavors reminiscent of the perfect marriage between aged parmesan and aged cheddar. There is also a variation of the Artigiano Classico which is enrobed in balsamic vinegar with hints of cipoline onions. Once aged to perfection the wheels are sent out to select markets.

Tasting Notes: Pleasantly nutty with a slightly sweet, tangy finish. Delicate, Crystalline Texture. Pair with Chianti, Port Wine, or your favorite Hard Cider.
