Saint Paulin, from Poitou-Charentes, France, is a creamy, semi-soft cheese made from cow’s milk. It has history as the first French cheese produced from pasteurized milk and was originally made by Trappist Monks. The bright, mandarin orange rind is thin, smooth and leathery, encasing the slightly pressed, curd-in-wheel-form cheese. The taste of St.Paulin — almost identical to the very well known Port Salut, but much more affordable — is mild and very pleasing as dessert or table cheese. You’ll find it is creamy and butter-like, yet firm enough for slicing.
