Crazy for Seafood

The 2-Day Seafood Sale is finally here!  Since I don’t include a lot of meat in my daily diet, seafood is my primary source of protein, and I’m always looking for deals!  We recently moved, and our freezer is pretty empty, so this 2-Day Seafood Sale couldn’t have come at a better time for me to stock up.

Though there are plenty of great things on sale today and tomorrow, here are some of the things that I’m most looking forward to:

  • Scallops– Scallops are always my go-to dish at restaurants, but I’ve never bought them to cook at home.  I don’t know why, but I’ve always been intimidated to buy and prepare them — I’m changing that this week. Wild Caught Jumbo Sea Scallops are on sale for $9.99 lb until next Tuesday (they’re not a part of the 2-Day Seafood Sale– instead they are on sale all week!).  I want to start out with an easy recipe so I think I’m going to try these Sauteed Scallops with Parsley and Garlic.  They look super yummy, and I think they would go great on a bed of angel hair pasta.

  • Shrimp–I find it easy to incorporate shrimp into my cooking, but my all-time favorite use is Shrimp Tacos.   I’ll use a recipe like this as a guide but usually add chopped cabbage and avocado and anything else I’m in the mood for that day.  The Lime Crema is one of my favorite additions to the taco, though I usually sub Greek Yogurt for the sour cream and chop up cilantro to throw in there.  It’s a light meal that doesn’t take much preparation.  A 2-lb bag of shrimp is on sale for $17.99 during the 2-Day Seafood Sale.

  • Salmon– We make salmon a lot in our house; it’s easy for us to throw it on our George Foreman grill in the winter (and the actual outdoor grill in the summer!) for a quick meal.  This Soy-Glazed Salmon recipe is also one of our favorites and is probably something we will be making with today’s purchase.  Fresh Faroe Island Salmon Fillets are on sale for $8.99 lb today and tomorrow.

I’m so excited to head to the store tonight to pick up my favorites and start cooking!  Let me know if you have a good seafood recipe to share with me that I can include in my rotation.
