Breakfast Bruschetta

The muggy, buggy days of summer are here this week, and I’m doing my best to enjoy them while they last.  Not the buggy part so much.  They’re pretty awful and bug spray is disgusting stuff.  The mugginess however, adds tons of delightfully (cough) unruly curls to my hair, an effect that can really only be achieved in the stickiest of summer months, or the steam shower at the gym. Since we’re trying to keep our cool, I’m making a concerted effort not to run my oven this week.  ‘Cause it’s pretty bad when the a/c is set at 75 degrees and there’s a steady stream of sweat dripping down the middle of my back at 7:42 a.m.

That was probably too much information this early in the day.

Anyways, I decided to create an easy, no cook breakfast with all of the great produce in the Market right now.  Something the punks wouldn’t balk at.  A dish that could easily be pulled together on a busy school day.  A meal that’s far and away more nutritious than the so-called breakfast pastry that comes in a silvery plastic wrapper and rhymes with Cop Parts.

I give you Breakfast Bruschetta!

The ZESPRI Kiwi people forwarded me some kiwi wisdom and I promised them I would share a bit of it with you here.  First of all, were you aware that bite for bite, kiwis are the most nutritionally dense fruit among the most common 27 fruits?  It’s true!  One serving (2 kiwis) contains more vitamin C than an orange, more potassium than a banana, and more fiber than a bowl of bran cereal.

When choosing green kiwifruit at the Market, select fruits that feel slightly soft, like a ripe peach or an avocado.  Wrinkled skin indicates over ripeness.  Gold kiwis are ready to eat when you see them on the produce stand.

Serves: many

2 kiwifruit, peeled and diced (ZESPRI brand are on sale, as mentioned above)
¼  pineapple, peeled, cored, and diced
½ pint strawberries, trimmed and diced
1 banana, diced

½ loaf Challah bread, sliced and toasted
Butter and cinnamon sugar
Vanilla yogurt for drizzling, optional

Gently toss diced fruit in a medium mixing bowl to blend.  Butter toasted Challah bread and dust with cinnamon sugar to taste.  Pile fruit mixture on top of toasted bread, and drizzle with vanilla yogurt.  Serve immediately.

Note:  I put my yogurt in a squeeze bottle, but if you don’t have one, don’t fret.  Spoon the yogurt into a zip top bag, push out the air, and squeeze the yogurt down into one corner of the bag.  Snip a little corner off the bag, and drizzle the yogurt onto the bruschetta.  Voila!  :-)
