Couscous Salad with Tomato & Basil
You guys are gonna love me. Just in time for another weekend, I have the perfect salad for entertaining. And although there are several types of lettuces on sale this week (watch for an AMAZING dressing this weekend…I’m not kidding….A.MAZ.ING), I just had to report on this salad, whose main ingredients are all. on. sale. You heard me right!! This salad is a bargain and a half!
So, not only is it friendly on the wallet, it goes great with most any type of grilled meat or fish. It’s lighter than a potato-based side dish…it couldn’t be easier to pull together, it travels well, and it tastes delicious.
Those are all the selling points I have for today. Just make it; you won’t be sorry!
Note: Next time, I’ll probably put a Greek spin on this salad by tossing in a handful of crumbled feta, a little seeded/diced cucumber, and a few sliced kalamata olives. Toasted pinenuts would be awesome here too.
COUSCOUS SALAD WITH TOMATO & BASIL
Serves: 6

2 1/4 c. chicken broth
10 oz. couscous (Lundberg brand is on sale)
1 c. chopped scallions (on sale)
1 c. (generous) seeded chopped tomatoes (stem tomatoes are on sale)
1/3 c. thinly sliced fresh basil (Living Basil is on sale)
1/2 c. good quality olive oil
1/4 c. balsamic vinegar (I used sherry vinegar)
pinch cayenne pepper
Bring broth to boil in medium saucepan. Add couscous. Remove from heat. Cover; let stand 5 minutes. Transfer to large bowl. Fluff with fork. Cool.
Mix all ingredients into couscous. Season with salt and pepper. (Can be made 1 day ahead. Chill.) Garnish with additional basil sprigs.
