Some of my fellow moms and I were discussing how now that summer is here, most of us have all but completely lost control of our households. The kids have taken over. There are constantly dishes in the sink. There are never any glasses in the cupboard. Clean clothes are hard to come by due to the fact that many children insist on several wardrobe changes throughout the day. Someone mentioned that no matter how many times she goes to the store, there never seems to be any food in the house and we all wondered “HOW DOES THAT HAPPEN?!”
Maybe you’re in the same boat. I am for sure. I’m sitting at my kitchen island and there are stacks of laundry piled from one end to the other, as well as a mess of dirty dishes in the sink that I haven’t gotten to yet because the dishwasher needs to be unloaded. And I’ll take care of all that stuff eventually, but because I think like a food blogger and not a normal person, I have to obsess over the current sale ad for a moment here and tell you what I’m making for dinner this week. It’s all good. I love summer, and I love to cook, and I’ve let my control freakish tendencies slide because I know that just like summer, my household disorganization isn’t going to last. Embrace the chaos, friends. Let’s talk dinner. Specifically, sandwiches.
First up is this Herbed Chicken Salad – serve it on toasted Sendik’s Country White. Poach your own chicken or make things easy on yourself and pick up a Sendik’s rotisserie chicken in the deli. Other sale ingredients to look for are Stoneyfield Farms Oikos Yogurt or Yoplait Greek Yogurt, and Sweet Onions. Make some extra chicken salad and keep it onhand for lunches.
Boneless Sirloin Pork Chops are a great deal at $1.99 per pound this week. This Pork Chop Sandwich makes great use of them; you’ll notice the original recipe calls for pork tenderloin, but I’ve used chops with good success. Pound them out a bit before you marinade them, they’ll cook faster on the grill. Look for sale Minute Made Orange Juice, Iceberg Lettuce, Beefsteak Tomatoes and Sweet Onions. Yum.
For a vegetarian option, I love these Caesar Salad Bagels. This sandwich requires no cooking whatsoever, so it’s the perfect lunch or dinner for a steamy hot day. Look for sale Bagels Forever Bagels (frozen), Hendrickson’s Unique Dressings, and the super delicious Sartori Classic Parmesan Wedges.
