I saw something on Facebook the other day that made me laugh. It was a simple drawing of a confused-looking, middle-aged woman and the caption said something like, “How can I remember the words to every 80’s song I ever heard, but I can’t recall why I walked in the room just now?”
That’s how I’ve been feeling lately. Especially since the calendar has been rapidly filling with all manner of back-to-school errands and meetings and practices and orientations and registrations … it’s hard to keep track of it all. Hopefully nothing major will be forgotten along the way, and I’ll manage to remember all of the big and small things that need to be tended to. It’ll be a stretch. But ask me the lyrics to any song off of the ‘Pretty in Pink’ soundtrack, and I can rattle those off to you without a hitch. That’s messed up.
I know I won’t forget to make dinner …. here’s what the DamFam is eating this week, based on current sale ingredients of course. As usual, these recipes are kid tested, mother approved.
This Pasta with Tomato Almond Pesto is probably one of the best pasta dishes I know how to make. I gave the recipe to one of my foodiest foodsnobby friends who made it and called it (no lie) “life changing”. It didn’t change my life, but it is pretty incredible. Use the sale grape tomatoes and make a double batch; I love to keep this stuff in the freezer.
I’ll be swapping in the sale Sendik’s Natural Farm Raised Tilapia when I make this recipe later on in the week. It’s a Blackened Snapper with Edemame Succotash, and oh my gosh, it is excellent. You could easily use any light fish here; I think the tilapia will be perfect. Again, look for the sale grape tomatoes. I’ll probably do some kind of rice alongside – possibly the Vigo Yellow Rice that’s in this week’s ad.
A friend’s birthday is coming up on Friday and we’re planning on taking a picnic basket full of goodies to Summer Sounds in Cedarburg – have you done that yet this summer? Live music at the bandshell every Friday night? It’s pretty fun. We’ll make dinner out of appetizers, so I want to take something substantial. This Filet of Beef Crostini with Artichokes is a bit of a splurge but heck, it’s a birthday after all. And hungry men will be present. I justify this choice in appetizer because whole tenderloin is on sale, as are Reese Marinated Artichoke Hearts, and clamshells of Earthbound Farms Greens.
