On Tuesday when I said that I was concentrating on breakfast this week, I wasn’t kidding around. I was prepared when my kids came down for their first-day-of-school morning meal; they had pumpkin spice muffins, fresh fruit, and yogurt. Here are three completely different ideas for the most important meal of the day, and all three are good and good for you in one way or another.
One thing I can always get my family to eat is quiche. I play around with the fillings based on what I have on hand – but here are two recipes that I love. I certainly would not expect anyone to get up at the crack of dawn on a school day to make quiche from scratch (I sure wouldn’t), but the beautiful thing about quiche is that it reheats really well in the microwave. So I’ve been known to make one or two on a Sunday night then cut and reheat individual slices as needed. If I’m feeling crazy ambitious, I make a bunch of hashbrowns while the quiche is in the oven. Viola, breakfast is served. Look for sale Sendik’s Applewood Bacon, Wisconsin Mild Cheddar, and Boar’s Head Tavern Smoked Ham. OreIda Potatoes are also on sale if you’re looking for a side dish.
I love this idea for Breakfast Bruschetta. Mix up your fruit salad the night before and use most any fruit your family likes, of course. This is also lovely if you’re having the ladies over for a back-to-school coffee. Pretty. Easy. And delicious. Look for sale Wallaby Yogurt or Dannon Yogurt. Sale honeydew and nectarines would also be great here.
One of my all time favorite recipes in my breakfast arsenal is this amazing and outrageously good homemade granola. I will tell you right up front that this is not the most frugal recipe I’ve ever recommended – it calls for REAL maple syrup (yes, the real deal – not pancake syrup) and a good quality olive oil. But, the recipe makes an absolute ton and you’ll love having it around to sprinkle on yogurt (sale Wallaby or Dannon brands as mentioned above) or ice cream (Blue Bunny is on sale) or just to munch by the handful when no one else is looking. Not that I’ve ever done that. You will love it!
