Here are three awesome kid tested, mother approved recipes to help you make good use of items in the current sale ad. Truthfully, my kids only approved two — you can probably guess which ones. I highly recommend the soft tacos for football watching on Sunday and I’d choose the salmon for a delicious light dinner or for entertaining. I’m making a batch of the peanut butter cookies asap because a) C is for cookie and b) there’s nothing worse than an empty cake stand.
Pick up a sale Sendik’s Natural USDA Choice Black Angus Boneless Chuck Roast (that’s a mouthful, right?), a bag of Shredded ShurFresh Cheese, and a box of Rachel Ray Beef Stock for these Beef Soft Tacos with Salsa. This is one of my favorite uses for boneless chuck roast; the finished product is actually like a Mexican inspired stew. Strain off the liquid to use the beef as a taco filling. I’ve also served it over simple white rice and topped it with shredded lettuce and cheese for more of a burrito bowl – add sour cream and corn chips on the side. We love it either way. Leftover beef freezes well for a rainy day.
I love this Indian Spiced Salmon over CousCous Salad – it is absolutely amazing and is the perfect use for the Faroe Island Salmon that will be on sale on Tuesday. Oh my gosh. I can’t wait to make this again! Look for sale Dannon Yogurt for the Curry Yogurt Sauce. Also, swap in sale One Sweet Cherry Tomatoes and Mini Seedless Cucumbers for the CousCous Salad.
Lastly, here’s one for your cookie jar: hands down The Best Peanut Butter Cookie You Will Ever Eat. I make them extra big and dunk them in cold milk. OMG. You need these in your life! Look for sale ShurFresh Peanut Butter and Fisher Gold Roast Peanuts. Freeze half the dough for a rainy day if you don’t trust yourself to have too many of these hanging around.
