Here are three very different, very delicious, kid tested, mother approved chili recipes that make great use of the current sale ad. Any and all of them are easy like Sunday morning, AND they’ll make your house smell amazing. I’m making the Turkey & Pinto Bean version on Friday afternoon for quick lunches all weekend, which will work out great if it doesn’t all get eaten by Friday night.
First up is Chili Corn Chip Pie, which is actually not a pie at all, and I have no idea why the people at Cooking Light gave it such a name. A quick food snob disclaimer: this is the ultimate in kid-friendly dining. It’s delicious, but it isn’t exactly haute cuisine. I love it, and I don’t care who knows. Look for sale Sendik’s Natural Black Angus Ground Chuck, Red Gold Tomato Pasta and Tomatoes, ShurFresh Shredded Cheese, Daisy Sour Cream, and Jumbo Mayan Sweet Onions.
Ina Garten’s Chicken Chili is another of my favorites (and slightly more upscale than Chili Corn Chip Pie). I absolutely love this with all the garnishes and a big hunk of good corn bread. Look for sale Sendik’s Natural Boneless Skinless Chicken Breast Value Packs, Red Gold Tomatoes, ShurFresh Shredded Cheese, Daisy Sour Cream, and Jumbo Mayan Sweet Onions.
Finally, Turkey & Pinto Bean Chili is great if you want something a little different – this version is served over hot basmati rice. Fair warning: this makes an absolute TON. Last time I made it, we had enough for dinner AND two lunches AND some for the freezer. Look for sale Jumbo Mayan Sweet Onions, Red Gold Tomatoes, ShurFresh Shredded Cheeses, and Daisy Sour Cream. Yum.
