My romance with the slow cooker continues. I just pulled together what looks to be a fabulous version of chili con carne, using chuck roast instead of ground beef. I can’t wait to see how it turns out seven hours from now. If it’s blogworthy, you’ll see it here the next time chuck roasts go on sale. In the meantime, here are three super kid-friendly, super easy, super mom-approved (by that I mean approved by Super Mom) recipes that make great use of current sale ingredients. All of them are DamFam standbys. Enjoy!! : )
My youngest is absolutely over the moon for Creamy Fettuccine with Ham and Vegetables. Oh my gosh, she adores it. The rest of us love it, too. I would use the sale Buitoni Pasta (find these next to the eggs). The original recipe calls for dicing up a ham steak, but Usinger’s Baked Ham is on sale in the deli; ask them to cut you one or two chunks to equal about a pound. I always make this as written, but feel free to swap in any veggies your kids will eat.
You hear me talk about Angel Hair with Broccoli and Herbs all the time, and that’s because I make it all the time. All. The. Time. I could whip it up with my eyes closed. This is a fantastic vegetarian main dish, but I love to serve it as a side to roast chicken or seared salmon. Pick up some good bread to go along with it — I’d definitely serve a loaf of the sale Ecce Panis Whole Wheat (I’m a huge fan of their breads). Broccoli is on sale; again, Buitoni Pastas are also on sale.
The third main dish that ‘s on my radar this week is this Almond Crusted Tilapia, and it is soooooo good. Sendik’s Natural Farm Raised Tilapia is on sale. Swap in sale Kikkoman Panko if you’re running low on breadcrumbs; make a box of sale Near East Rice Pilaf to go alongside, and steam up some sale fresh broccoli and cauliflower. Dinner is served!
Finally, looking ahead to the weekend: Rhodes Bread Dough is on sale in frozen foods. Put your little monkeys to work on Saturday morning – have them help you pull together a pretty pan of irresistible Monkey Bread. Don’t forget you’ll need to thaw the dough overnight before using it. : )
