I’ve got two great frugal pasta ideas here today if you’re stuck on what to make for dinner this week. Both are kid tested, busy mom approved and both are really, really good. And although I haven’t yet jumped into the Christmas spirit with both feet, the third recipe is for one of my favorite holiday treats. Even if you don’t make it yet, it’s the perfect time to stock up on the main ingredients.
Hopefully you hit the 2-Day Meat Sale and now have a bunch of chicken breasts on hand, and if you do, Quick Chicken Pomodoro is the perfect way to use them up. This comes together in a flash and my kids love it over angel hair. Look for sale medium yellow onions, Red Gold Tomatoes, and either Barilla Pastas (dried) or RP’s Linguini or Fettucine (fresh; find this next to the eggs in Dairy).
Grape tomatoes and slivered almonds are both on sale, which to me means it’s the perfect time to make Tomato & Almond Pesto. If you’ve never made this before, you are seriously missing out. Forget the pasta, I could eat this stuff right out of the processor with a spoon. I’m even considering packaging some up in a pretty jar and giving it as a hostess gift this weekend. It’s that good. Barilla or RP’s Pastas are on sale, as mentioned above. If you’d like to serve warm bread alongside, Ecce Panis Whole Wheat Bread is on sale in the Bakery or New York Brand Garlic Bread is on sale in frozen foods.
Finally, if you’re already in the mood for holiday baking, two brands of chocolate chips and chunks are on sale: Nestle and Enjoy Life. Honey Maid Graham Crackers are also in the current ad. These two ingredients are the keys to the fantastic Lazy Girl’s Irresistible Toffee Crunch – one of my favorite holiday yummies.
