Here are two great kid friendly, mom approved recipe suggestions to help you if you’re fretting over what to make your own Dam’Fam for dinner this week. The third recipe, Double Chocolate Biscotti, is one of my favorite cookies. Nearly all of the ingredients are on sale, so this is the perfect time to stock up for holiday baking projects. The biscotti freeze beautifully, if you’d like to save some to put out for Santa. : )
As for dinner: I have an abundance of chicken breasts in my freezer thanks to the meat sale last week. We’re having this yummy Panko Crusted Lemon Chicken tonight, with either smashed redskin potatoes or a simple rice pilaf on the side. Easy peasy lemon squeezy, and my kids love it. Look for sale Fancy Lemons, Shurfresh Eggs, and Kraft Parmesan.
Use the sale Sendik’s Italian Sausage as the base for this fantastic Penne in Country Ragu. Last time I made this, I had to hide the leftovers so that I had enough for a picture. Again, kids love it, but I would absolutely feel comfortable serving this to guests. Double it and freeze some for a rainy day, that’s what I aim to do. In addition to the sale Italian sausage, look for two brands of sale pasta (Davinci or Creamette) and Kraft Parmesan. The recipe also calls for a bit of good red wine – as always, there are several sale reds to choose from. Ask a friendly Sendik’s Wine Department representative for a recommendation – each one of them will offer up their own great pick. : )
It just occurred to me that I’ve never actually shared this biscotti recipe on the blog before, so here it is. These are so fabulous with hot coffee or cold milk; drizzle the cooled cookies with melted white chocolate if you’re in to gilding the lily. : )
DOUBLE CHOCOLATE WALNUT BISCOTTI
YIELD: makes about 30
2 c. all purpose flour (King Arthur or Gold Medal Brands are on sale)
1/2 c. good quality unsweetened cocoa powder
1 t. baking soda
1 t. salt
3/4 stick (6 T.) unsalted butter, softened
1 c. granulated sugar (C&H Brand is on sale)
2 large eggs (ShurFresh Brand is on sale)
1 c. walnuts, optional (Family Packs of Chopped Walnuts are on sale)
3/4 c. semisweet chocolate chips (choose either sale Ghirardelli or Nestle Brands)
1 T. confectioners’ sugar (C&H Brand is on sale)
Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl with an electric mixer beat together butter and granulated sugar until light and fluffy. Add eggs and beat until combined well. Stir in flour mixture to form a stiff dough. Stir in walnuts and chocolate chips.
On prepared baking sheets with floured hands form dough into two slightly flattened logs, each 12 inches long and 2 inches wide, and sprinkle with confectioners’ sugar. Bake logs 35 minutes or until slightly firm to the touch. Cool biscotti on baking sheet 5 minutes.
On a cutting board cut biscotti diagonally into 3/4 inch slices. Arrange biscotti, cut sides down, on baking sheet and bake until crisp, about 10 minutes. Cool biscotti on a rack. Biscotti keep in an airtight container 1 week, and frozen, 1 month.Fresh, Frugal, Fabulous, News | December 6th, 2012
