I’ve been attending this crazy-in-a-good-way boot camp several mornings a week. I won it (“won it“, husbands love that, don’t they?) in a silent auction last month after I had a couple cocktails. It seemed like such a good idea at the time. That was before approximately 12,000 squats-lunges-burpees-planks-pushups and other torturesome paces the leader (my dear friend, Jane) put us through. I kid — mostly. It is a tough workout, but it’s been a fantastic experience so far, and I always feel like a million wobbly bucks every time I leave her class.
You can tell by the types of recipes I post here that I’m no militant health nut. I love to cook, obviously — and clearly, I love to eat. But after investing so much energy and work in boot camp, the last thing I want to do is blow it all on eating poorly. Here are several meals I’ll be making this week in an effort to keep my dining in check. All three are from Cooking Light, and each one has been deemed blogworthy by the whole DamFam. If I can keep portions in control, I’ll be golden.
Lightened Up Fettucine Alfredo with Broccoli is the perfect meal for when a pasta craving strikes. I’ve made this recipe approximately ten times in the past two months, no joke. Sometimes I serve it as a side dish, other times I add seared chicken or shrimp — what a great way to get picky eaters to gobble down the broccoli. Look for sale Creamette Pastas and fresh broccoli.
Chili Corn Chip Pie is the ultimate kid friendly meal – I’ll be making mine with Ground Sirloin to conserve calories, but if conserving cash is your thing, Value Packs of Sendik’s Ground Chuck are on sale on Tuesdays during the 7 Days, 7 Ways to Save sale.
