It’s the first day of spring as I’m writing to you now, and even though it’s still brisk and blustery out there, I thought maybe it was appropriate to start thinking about lighter foods for warmer months. Eventually temperatures will rise, and so will hemlines, and no one wants to walk around looking like all they did was put back beef stew and mashed potatoes all winter long. Besides, I’m on a sugar bender from celebrating National Chocolate Week for the past four days. Let’s talk lighter eating.
One of the best soups in my repertoire is this awesome Minestrone with Basil. It is loaded up with tons of fresh vegetables and just a little bit of pasta. I love to serve it with good bread, but if I have time I always make the Cheddar Scallion Scones that you’ll find on the same page as the soup. Whip it up on Friday and keep the pot in your fridge for weekend lunches, that’s what I aim to do. For the soup you’ll find Knorr Stocks on sale; if you make the scones look for Sargento Shredded Cheese, Land o’ Lakes Butter, and Gold Medal Flour is also on sale if you’re running low.
Falafel with Cilantro Yogurt Sauce is a nice little vegetarian lunch or dinner — I could not believe how well it went over here last time I made it (four thumbs up, one thumb down – no small wonder who dissented). I always serve a Tomato and Cucumber Salad alongside; you’ll find the recipe on the same page as the falafel. Look for sale Shurfresh Eggs, Sapori Tomatoes, Sapori Seedless Cucumbers, and California Lemons.
Take advantage of Sunday’s sale Sendik’s Natural Boneless Pork Chops and make these Southeast Asian Chops. Don’t let the fish sauce spook you. If you’re not familiar with it, it has a very strong smell that my girls have described as “gym socks” (sorry, keeping it real) but once they got past the idea of the fish sauce in the marinade, they fell in love with these chops. Honest. They’re really good. Again, the chops are a bargain on Sundays – give this one a try.
