This week, I’m discussing my habits with you here — Tuesday it was my pizza issue. Today, it’s mangoes. The DamFam fights over mangoes the same way we do about greasy cartons of Chinese food leftovers. I guess there are worse things to fight about. So when mangoes go on sale, like they are this week, I stock up. I bring them home and put my handy little mango pitter to work (do you have one? This is what it looks like). I pit them, then slice the halves lengthwise, lop off the peels, then cut the strips into cubes. I usually put some in a fruit salad right way and stash the rest in the freezer for smoothies. Here’s one of our favorites.
1 c. cubed peeled ripe mango (frozen is good; fresh mangoes are on sale this week)
3/4 c. sliced ripe banana (about 1 medium)
2/3 c. fat free milk
1 T. nonfat dry milk (optional; I used non-dairy dry coffee creamer)
1 t. honey
1/4 t. vanilla extract
Place mango and the remaining ingredients in a blender. Process until smooth. If you like it really cold (I do), add a handful of ice cubes while the mixture is processing.
Since I told you all about my favorite way to poach chicken the other day, I thought maybe the power of suggestion might have gotten you on a poached chicken kick. If you find yourself with a plethora of poached chicken hanging around this week, here are two more recipes that’ll help you use it up. Both are kid tested and mom approved and either would be perfect for (sigh…) another rainy night.
Chicken Spaghetti is one of my all time favorite recipes, and five of its ingredients are on sale this week. Look for sale Sliced Baby Portabella Mushrooms, Vidalia Onions, Sendik’s Brand or Creamette Brand Pastas, Value Packs of Boneless Skinless Chicken Breasts, and Westpac Frozen Vegetables.
I love this version of lightened up Chicken & Dumplings – you might remember it from when I first posted the recipe back in February. As I mentioned then, this is more of a soup-y version and you will probably want to double it. Look for sale chicken (as mentioned), Vidalia Onions, and Sweet Carrots.
