Isn’t it awesome when a leftover anything can be repurposed into a new dish that tastes completely different than the original? The following three recipes do just that. Of course, I don’t expect to have nearly enough turkey to make all three dishes, but it’s always nice to have options, right?
This Chicken & Dumplings is a DamFam Greatest Hit. We are all total freaks for any kind of dumpling, especially the kind that sit atop a yummy chicken stew. In this case, turkey. For this recipe, skip the part that calls for browning chicken thighs; just start with the veggie sauté step and add your cooked, shredded turkey in where it says to put the chicken back in the pan. This recipe is from Cooking Light and therefore isn’t the rich, creamy stew you might be expecting — good news for anyone who feels like they overdid it on the pie and mashed potatoes on Thanksgiving. Look for sale Emeril’s Chicken Stock; you probably already have the rest of the ingredients in your pantry and fridge. : )
Next, do yourself a big old favor and make a pan of this Homestyle Chicken & Rice. I’m not a huge casserole fan by any stretch but I absolutely adore this dish; it makes a ton, so feel free to divide it into two pans and freeze one for a rainy day. Skip the part of the recipe that calls for poaching chicken breasts; move on to the rice step and then add your turkey in where you’d put the shredded chicken back in the pot. Heavenly stuff right there, omg. Look for sale Freshlike Frozen Vegetables, Lundberg Rice, Emeril’s Chicken Stock, and Sargento Shredded Cheeses.
Finally, if you only have a handful or two of leftover turkey meat, try this Chicken & Black Bean Quesadilla — it’s a great way to stretch just a little bit of bird. I love these for a weekend lunch or a light dinner. Look for sale LaPreferida Flour Tortillas, Sargento Shredded Cheese, and Sendik’s Fresh Pico de Gallo and Guacamole. Yum.
