So, you probably won’t even believe that it’s come around again so quickly, but holy smokes, everyone — it’s National Chocolate Week. Who knew? This crazy celebration catches me off guard every gosh darned year. This morning I found myself under the gun to whip up something chocolate-y before the hullabaloo came and went without being paid its proper respects. Seven Layer Bars are cooling for the cakestand as we speak.
I ate approximately one and a half of these bars per week (my own bar and at least half of the Husband’s) throughout 40 weeks being p.g. with No Thank You Boy 17 years ago. I haven’t had one since. Whether you’re expecting or not, you should definitely have at least one, though. Here’s how to make them, and please pay super close attention because it is very, very complicated and hard to do. Snort. Totally kidding, these are the easiest dessert you’ll ever make. If they’re not chocolate-y enough for you, scroll down to the bottom of the page for more chocolate inspiration.
SEVEN LAYER BARS
Makes 30, depending on how you cut them : )
3/4 c. butter, melted (Land o’ Lakes Brand is on sale)
2 1/4 c. graham cracker crumbs
1 c. semisweet chocolate chips (Nestle Morsels are on sale)
1 c. butterscotch chips (Nestle Morsels are on sale)
1 c. chopped walnuts, toasted (optional **)
1 – 14 oz. can sweetened condensed milk
1 1/3 c. shredded coconut
Preheat oven to 350. Line a 9×13″ baking pan with foil, extending over the sides of the pan. Spray the foil with no-stick cooking spray.
Combine the melted butter with the graham cracker crumbs and mix well. Press the crumb mixture firmly into the bottom of the prepared pan. Layer chocolate chips, butterscotch chips, and nuts over crumbs. Pour condensed milk over nuts. Sprinkle coconut over condensed milk. Bake until edges are golden brown, 25 – 30 minutes. Let cool.
After bars have cooled completely, lift up by the edges of the foil to remove from the pan, transfer to a work surface, and cut into individual bars.
