Noilly Prat Dry

Once some of our special grapes have left the vineyards of the region surrounding Marseillan, the complex and elaborate process of producing Noilly Prat Original Dry involves 4 principal stages overseen by the Matre de Chai. These include the indoor ageing of sweet wines in the Chai des Mistelles and the outdoor ageing of the regional grape varietals, picpoul and clairette, in what is known as LEnclos. Once these wines are blended they are transferred to the indoor oak vats held in La Salle de Secrets where the process of maceration begins.
