In deciding on what sort of dish to discuss here today, I was torn between two major issues at hand: back-to-school-night dinner ideas, and Packer watching munchies. Don’t laugh. In my little world both rank right up there as “major issues” this week, so I went round in my head and then decided on a happy compromise. These crunchy little shrimp make a fantastic busy weeknight main course, but they are equally suited for football snacking. Since I’m all about learning new tricks and facing down fears in the kitchen, I taught myself how to roast bell peppers over an open flame this morning. Up until now, I’ve been a purchased-jarred-peppers-kinda-girl when I’ve needed them for a recipe, mainly due to the fact that roasted capsicums resemble pepper-shaped lumps of Kingsford briquettes, and I guess I was intimidated by the idea of charring anything that badly in my own home. Well, I’m here to tell you that it wasn’t at all difficult to do and although it makes a little bit of a mess, I had a great time and the results are delicious. A wise person once said that it’s bad luck to begin any post-holiday clean eating plan before New Year’s Eve. Since I’m never one for self-sabotage, here’s one last hurrah before we start counting calories on January 1st. Or on the 2nd, if you’re into procrastination.
