So I thought I’d follow up Tuesday’s Asparagus & Wild Mushroom Risotto with a few lighter recipe recommendations for the rest of the week. First of all, although I haven’t mentioned it here, I have been on a huge salmon kick lately. I tried a new recipe the other night that I’ll share with you all at some point, but it was so delicious that it all got eaten and there wasn’t a pretty piece left for a photo op (a frequent problem at my house).
Easter dinner was so delicious, but I’m about over ham, how about you? I intentionally overshot on the poundage, wanting to have leftovers. Well, leftovers we got. Had a ham sandwich for lunch yesterday. Put slices of it on egg sandwiches this morning. Easter dinner re-run last night. And there are still a few little scraps left in the fridge … the frugal cook in me should stash them away in the freezer for omelets or soup but I’ll admit I’ve been sneaking them to the DamDog. I’m swearing off ham. Tonight we’re having a meatless entree, and this is what it is.
Because I think like a food blogger and not a normal person, I was having a little spazz attack over which recipe to discuss here today. But with the holiday weekend and opening day coming up, I thought everyone might appreciate a recipe that would be a lighter contrast to all the ham and chocolate bunnies, marshmallow peeps, burgers, brats and beers we’ll all potentially consume.
I had a good mind to share Grandma Damron’s recipe for The Naughtiest Cheesy Potatoes on God’s Green Earth (which I’ve been threatening to do here for like, almost three years), and I came pretty close. But since no one actually strives to sport a jelly belly on Spring Break, the lighter option won out. This is one of my go-to appetizer recipes; I whip it up when I want to serve something gorgeous, semi-healthy and in a pinch. You should try it, too.
I clipped this recipe back in September because its headline caught me: “FAVORITE 20-MINUTE RECIPE #7” is what it said, just above the recipe title. Color me happy, I thought. Who couldn’t use a 20 minute recipe?

I’m thinking ahead to this weekend and the semi-controlled chaos of Easter morning. It’s always a very big deal for the FamDam, mainly because of how The Bunny chooses to hide the prized baskets. I know you’re not going to be able to fathom this, but that wacky little Bunny strings hundreds of yards of yarn through nearly every room of our house and leaves ‘the goods’ at the end of the string. Three kids, three baskets, three different multi-colored yarn trails.
I am planning on lightening up a little bit though, so I made one of my favorite meat loaves this weekend. This recipe makes a huge meat loaf, just so you know. I usually make the whole thing, then divide it in half and freeze one for a rainy day. Leftovers make fabulous sandwiches!
Good Monday afternoon! What a terrific weekend it was — great weather, good food, and fun times spent with some of my favorite people. The only bummer is that the Packers lost, but what an exciting game! I had it on in the kitchen while I was prepping this delicious Sunday supper.
I hope you all found the time to cruise the meat and seafood sale on Tuesday! When I stopped by the Mequon store at noon, the meat counter was packed with carnivorous shoppers snapping up bargains (“beefing” up their freezers, maybe?! I know, sorry). My freezer is now well-stocked with baby backs, pork tenderloin, and ground chuck. A value pack of boneless chicken breasts also found its way into my cart. I’m using half of it for today’s recipe: Chicken Gyros with Yogurt Feta Sauce.
Ugh, I feel like ten dollars this morning. This is not a good way to start the week.
I ate too much this weekend. And if you want the truth, I went overboard on the cocktails, too – we went to a really fun (LATE) dinner party on Friday, then out to the lake on Saturday, and had company on Sunday. The weather was gorgeous, and I just felt like livin’ it up and indulged just a teensy bit too much.
