Cinnamon Bun Popcorn

If the current cold snap has you in the mood to immerse yourself in a cinnamon and white chocolate-covered baking project, then I’ve got the perfect little number for you today. I would love to speak in depth about it, but I was taught not to talk with my mouth full. So I’ll just say (in between bites, of course) that this popcorn is a hit wherever it goes (slumber parties, bake sales, or your family room), it makes a perfect hostess gift, and it would be a terrific addition to any Thanksgiving dessert buffet.

Summer Corn Chowder

I know you’re thinking I’m completely out of my tree to be sharing soup here today. I don’t blame you (what loon craves soup when it’s 86 degrees?) — but for some reason this chowder spoke to me, as recipes often do. It said “make me for dinner, you won’t be sorry”. So I did, and I’m not. And you won’t be sorry when you make it either.

The corn right now is pennies an ear but best of all, it’s sweet and delicious. I served this last night with whole wheat baguette and slices of watermelon on the side. Even for a hot soup, it was the perfect summer meal. I hope you like it too. : )

If summer’s heat ever comes back in full force, this is what you should make to celebrate its return. I made these for dinner at the lake this past weekend when it was pouring and we were bundled up in jeans and sweatshirts and what I really felt like making was meatloaf and mashed potatoes — but I had all of these ingredients on hand and decided to forge ahead with a summer menu anyway. It’s summer, darn it! Let’s eat some summer food.

Since I’m all about learning new tricks and facing down fears in the kitchen, I taught myself how to roast bell peppers over an open flame this morning. Up until now, I’ve been a purchased-jarred-peppers-kinda-girl when I’ve needed them for a recipe, mainly due to the fact that roasted capsicums resemble pepper-shaped lumps of Kingsford briquettes, and I guess I was intimidated by the idea of charring anything that badly in my own home. Well, I’m here to tell you that it wasn’t at all difficult to do and although it makes a little bit of a mess, I had a great time and the results are delicious. I watched this video and got perfect results. Give it a try, don’t be afraid. It’s fun! : )

Lightened Up Vanilla Bean Ice Cream with Fresh Strawberry Sauce

In honor of June being Dairy Month, I decided to kick things off with summer’s first batch of ice cream from scratch. I sacrificed a waffle maker in the process. While I was standing on a chair above my pantry this morning, I moved our behemoth bread machine to the side and inadvertently knocked my thousand year old waffle maker to its (timely?) death on the kitchen floor. It was quite a scene, let me tell you. All in the name of homemade vanilla bean. Oh well … what’s that phrase? If you wanna make an omelet, you gotta break a few waffle makers.

While it’s not glamorous or trendy and its nutritional content has come into question, there’s a time and place for iceberg lettuce in every cook’s repertoire, and I have the perfect salad recipe for you today. Fellow food snobs, drop your guard along with me — serve this pretty wedge as a pre-cursor to a decadent lobster dinner this weekend. Grill guys and girls, this salad would be equally excellent and absolutely appropriate alongside a gooey burger or thick, juicy steak at your Memorial Day cookout.

Spicy Quinoa, Cucumber & Tomato Salad

As we were going through our usual warm up at boot camp a few weeks ago, the conversation turned to (what else?) — food. Healthy food, naturally. I took the opportunity to throw myself aggressively into the warm up and keep my big mouth shut, as I don’t typically have anything constructive to contribute to these conversations. They tend to revolve around avoiding the very consumables that I happen to enjoy. I was concentrating on my form and was in my own little world of perfect side lunges when someone said, “Let’s ask the food blogger! Leah, do you happen to know a good recipe for homemade quinoa tortillas?” (A good recipe, like I have more than one up my sleeve). Well. I nearly laughed out loud and thought, I am being punked right here in the middle of Monday morning boot camp. I resisted a snappy reply, and instead, put on my saddest face and said only “sorry, I sure don’t.”

Leek & Potato Soup with Creme Fraiche and Thyme

Last Friday night we played mixed doubles paddle with friends and had an Irish-themed spread together afterward. Cocktails with an Irish spin were also flowing, and as a consequence, my game deteriorated early on in the evening. It was a sad state of affairs, since I’ve never had much of a game to begin with. Luckily for me, the Husband didn’t seem to mind covering most of the court (because clearly his Black & Tan wasn’t as large as mine was, ahem).
