Justin Red Wine, Justification, Paso Robles, 2007

Cabernet Franc (65%), Merlot (35%) (unfiltered). 2007 began with a cold, dry winter, resulting in an early budbreak. Spring remained dry and warm. By early summer, the soils were depleted of water holding capacity, naturally reducing yields by 30%. A mild, early summer turned hot. Steady, mid 90-degree temperatures ripened fruit consistently throughout the season. The thin-skinned Merlot was picked early September. Cabernet Franc, with its tough, thick skins, needed extra hang time to ripen, and was harvested the last week of October. The wine was blended and put back into barrel in August of 2008 for an additional 10 months of flavor and oak integration and a total of 18 months in barrel prior to bottling. - Fred Holloway, winemaker. 100% hand harvested. 100% hand sorted. 100% free run juice. 100% French oak (47% new). Barrel aged 18 months. 100% unfined/unfilterd. Alc. 14.5% by vol.
